Stuffed Mushrooms

This was my mom's go to as an appetizer when she entertained. I always loved them and miss her making them for her New Year's Day Party.
Ingredients
- (12) Large Mushroom Caps
- (1.5 cups) Bread Crumbs
- (1/4 cup) Almonds (chopped and blanched)
- (1.5 teaspoon) Chopped Chives
- (2 teaspoons) Sour Cream
- (1 Tablespoon) Sherry
- (to taste) Salt
- (to taste) Pepper
- (1 stick) butter
Directions
Take the stems from the mushroom caps, chop and simmer for 2 minutes in 1 teaspoon of butter. Add breadcrumbs, almonds and chives. Blend together with sour cream and a shot of sherry. Firm into balls and place in the mushroom cap. Season with salt and pepper. At this point they can be frozen until they are ready to warm, or dot with butter and place under broiler until the butter has melted and they begin to brown.
*Cremini Mushrooms I find are the best for this recipe
