This cheese is a grass-fed Guernsey raw milk cheese aged at least 60 days. This rich golden color of the cheese is natural. Guernsey milk naturally contains more Beta Carotene and is certified A2A2. The Applewood Smoked is added to the cheddar-based cheese in the fall. The smoked flavor is added by a specially treated smoke-curing.
